A cup free of off-flavors and defects, where the intended flavors read clearly and distinctly.
Clean cup means a coffee free of off-flavors, taints, and muddiness, so its real flavors come through clearly and distinctly. It does not mean bland; a clean cup can be intensely flavorful. It means there is nothing in the way: no fermented funk you did not want, no harshness, no dirty or musty notes blurring the picture.
Why it matters: cleanliness is one of the core attributes graded in cupping, because off-flavors usually signal problems at the farm, in processing, or in storage. A single defective bean, like a sour or moldy one, can taint a whole cup.
How it shows up: in a clean cup, you can name flavors confidently and they stay consistent through the finish. Washed coffees are often praised for cleanliness because the process removes fruit before drying. Cleanliness also makes acidity, sweetness, and overall balance far easier to read, which is why graders prize it.
