Why is my espresso pouring too fast or too slow?
Grind is the main lever: if the shot runs too fast, grind finer; if it runs too slow, grind coarser. Then check your dose and puck prep for channeling.
Shot time is mostly controlled by grind. A typical target is roughly 25 to 35 seconds to pull a normal brew-ratio (around 1:2, so 18 g in for 36 g out). If your shot gushes out in 15 seconds, grind finer. If it drips and crawls past 45 seconds, grind coarser. Adjust in small steps and pull again. This is the core of espresso-dialing.
Why grind drives shot time
Espresso forces pressurized water through a compacted puck. Finer grounds pack tighter and resist flow, slowing the shot; coarser grounds leave bigger gaps, so water rushes through. Espresso grind is far more sensitive than filter grind, so a tiny adjustment moves the time a lot.
The other dials
Grind is the biggest lever among the-four-dials, but if grinding alone will not fix it, check these:
- Dose. More coffee in the basket means a deeper, tighter puck and a slower shot; less dose runs faster. Keep dose fixed while you dial grind, so you only chase one variable.
- Distribution and tamp. Uneven grounds or a tilted tamp create weak spots. See puck-prep-wdt.
- Basket headroom. Too much coffee and the puck hits the screen; too little and it floats. Match dose to the basket size.
When the real culprit is channeling
If the shot is fast and the cup tastes thin, sour, and under-extracted at the same time, the problem is often not grind size but channeling: water punches a hole through a weak spot and ignores the rest of the puck. Cranking the grinder finer will not fix a channeling shot; it can make it worse. Look for spritzy jets, a soupy or pitted puck, and blonding too early on one side. Rule of thumb: change one thing, pull, taste. Speed alone tells you which way to move the grinder; taste tells you whether prep is the real issue.
